When I think of cooking with cannabis and making edibles I can’t help but think of hastily making cannabutter at my friends place and throwing it into the cheapest brownie mix money could buy. However, just because we want treats with an extra kick doesn’t mean we have to compromise deliciousness and depth of flavor.

The cookie recipe we use here is a tweaked recipe from Claire Saffitz’s book “Dessert Person” and will leave you salivating for more (and not just because you’ll be stoned). In this recipe we decarboxylate (decarb) the cannabis in order to “activate” it for absorption through digestion. It can be tricky, and if you heat the plant material too much or for too long, potency will be lost, so be attentive! If you’re looking to maximize the strength of your cookies you can play around with substituting the butter for coconut oil (either a 50/50 mix or 100% coconut oil). Just make sure to skip the browning butter stage if you plan to do this. Please note that not all measuring cups are not all the exact same size, for best results use a kitchen scale.

One last note–it’s a good idea to wait about an hour before deciding you don’t feel anything...✌

ο Preheat the oven to 200-225°F 

(Different ovens have hot and cold spots in different areas, the goal is to convert most of the THC-A into THC without burning it.) 

ο Break up cannabis using a grinder or simply by hand. Place ground up cannabis in an oven safe tray (metal or pyrex) and wrap/cover the top with aluminum foil

ο Place in preheated oven for 30 minutes (If your oven struggles with uneven heating make sure to check on the cannabis to prevent anything from burning)

ο After 30 minutes pull the tray and let it sit for about 10 minutes

(If you plan to brown the butter make sure you brown the butter before you infuse it)*

ο While the Decarbed cannabis is cooling, melt the butter at low temp in a small saucepan (if you are trying to maximize the strength of your edibles it is worth experimenting with coconut oil as a butter substitute. It is higher in fat content which is what THC binds to)

ο Once the butter is fully melted pour the decarbed cannabis into the melted butter and heat on low while stirring frequently (There are many methods to infusion including using jars and slow cookers)

ο Heat the mixture on low heat to a simmer (about 160°F, don’t exceed 200°F) for at least 1 hour stirring frequently (You can simmer this up to 2 hours to attempt to get the most out of your cannabis)

ο Strain the newly formed “cannabutter” through your cheesecloth or fine mesh strainer and let cool

*Browning the Butter (optional)

– Take half of the cut butter and place in your medium sized bowl or mixer bowl. – Take the other half of the cut butter (1 stick) and place into a small saucepan.  Heat on medium-low heat until butter comes to a boil, stir frequently.

– After about 5-7 minutes at a boil the butter will have brown flecks floating in it. 

– Remove from heat and pour over the other half of butter, make sure to scrape the brown flecks in as well.

– Pour in the 2 tbsp of Heavy Cream/Milk and let cool (No need to stir)
